Honesty is a white pear brandy also called “eau de vie,” a non-oak-aged spirit. It’s bottled a bit warm, nearly directly from the still, at 95 proof, to get as much pear into the bottle as possible. The result is a light pear bouquet followed by an eruption of serious heat.
